Classic New York Style Cheesecake
Graham Cracker Crust
Preheat the oven to 325°F (165°C) and lightly grease a 9-inch springform pan. In a bowl, combine and stir until the mixture looks like wet sand...
- 1 1/2 cups graham cracker crumbs (9-12 sheets)
- 1/4 cup granulated sugar
- 6 tbsp unsalted butter, melted
Press the mixture firmly into the bottom of the pan and about 1 inch up the sides, then bake for 10 minutes and set aside to cool while you make the filling.
Cheesecake Filling
In a large bowl, beat until completely smooth, scraping down the sides as needed...
- 32 oz cream cheese, softened
Add and beat in until just combined...
- 1 1/4 cups granulated sugar
- 1 tbsp all-purpose flour
Mix in...
- 1/3 cup sour cream
- 1/3 cup heavy cream
- 1 tbsp vanilla extract
- 1 tbsp lemon zest (optional)
- 1 tbsp lemon juice (optional)
Add one at a time, mixing on low speed just until each one disappears into the batter...
- 4 large eggs
- 2 large egg yolks
Overmixing at this stage beats extra air into the batter, which is one of the main causes of cracking, so stop as soon as the eggs are incorporated. Pour the filling over the cooled crust and smooth the top with a spatula.
Baking & Cooling
Wrap the outside of the springform pan tightly in two layers of heavy-duty foil and set it inside a larger roasting pan. Place the pan in the oven, then carefully pour in enough hot water to come halfway up the sides of the springform pan, and bake for 60-70 minutes until the edges are set and the center still jiggles slightly when nudged.
Note: The water bath insulates the batter so it bakes gently and evenly, which is the biggest defense against a cracked top. Avoid overbaking, since the cheesecake firms up entirely as it cools, and run a thin knife around the inside edge of the pan the moment it comes out of the oven to release it from the sides before it can shrink and tear.
Turn off the oven, prop the door open a few inches, and let the cheesecake cool inside for 1 hour before moving it to a wire rack to finish cooling to room temperature. Cover and refrigerate for at least 4 hours, or overnight, before releasing the springform ring and serving.
