Peel and dice...
- 4 granny smith apples
Place diced apples in a pot and cover with water. Boil on high for 7-8 minutes or until apples are softened.
Drain boiled apples and mash with a fork or potato masher. Set aside.
Whisk together in a large mixing bowl...
- 4 eggs
- 1 tbsp sugar
- 2 tbsp butter, melted
- 1/4 cup sour cream
- 1/4 tsp baking powder
- 1/4 cup milk
- 1 tsp vanilla
- 1 cup flour
Fold mashed apples into the pancake batter and drop by 1/4 cup fulls onto a hot buttered skillet over medium high heat. When bubbles form and start to pop on the edges, flip.
When pancakes are golden on both sides, remove and serve with butter and syrup. Or as President Grant preferred, a side of ham.
