Sausage Egg & Cheese Biscuit

Make a batch of biscuits.
Split evenly into 2oz balls...
- 1 lb sausage
Flatten each sausage ball into a large, thin patty. Create an indentation in the center, leaving the outer edge slightly thicker. This shape helps account for shrinkage during cooking.
In a frying pan, cook the sausage patties over medium-high heat for approximately 2 minutes per side. Remove from heat and set aside.

In a non-stick skillet over medium heat, melt...
- 1/2 tbsp of butter
Ensure the butter coats the entire pan. Pour in one portion of whisked eggs. The eggs should spread quickly and cook without browning.
Once the eggs are solid enough to move, gently fold the portion into a rectangle, and then fold it in half to form a square (or similarly shaped) egg patty.
Repeat this process for all remaining egg servings.

- 1 slice deluxe American cheese
Note: The best melting American cheese (the variety used in most commercial kitchens) is sold in a solid block of slices, rather than being individually wrapped. When shopping, look for packages specifically labeled "Deluxe" or consider purchasing in bulk from a discount store.
