Finely grate into a sieve...
- 1/2 medium sized cucumber
Sprinkle over the cucumber...
- 1/2 tsp salt
Let the cucumber and salt sit in the sieve for a while over a bowl (to let the salt draw out some of the moisture in the cucumber), set aside.
Combine together in a bowl and mix well...
- 1 cup greek yogurt
- 1 garlic clove, minced
- 1 tbsp extra virgin olive oil
- 1/2 tbsp red wine vinegar
- 1 tbsp fresh mint, minced
- 1 tbsp fresh dill, minced
- 1 1/2 tbsp lemon juice
(If using dried herbs for mint and dill, convert on a ratio of 1 tbsp fresh to 1 tsp for dried.)
Squeeze all the water you can out of the set aside cucumbers and then add to the sauce and mix thoroughly. Then season with more salt and pepper to taste.
