Pre-heat oven to 400º F.

Create about 2 tbsp of Adobo Seasoning (if you don't have it pre-mixed) consisting of the following spices...

  • 1/2 tbsp smoked paprika
  • 1/2 tbsp garlic powder
  • 2 tsp salt
  • 1 tsp onion powder
  • 1/2 tsp black pepper
  • 1/2 tsp oregano

Rub the seasoning mix thoroughly into...

  • 2 lbs boneless, skinless, chicken thighs

In a large skillet, with a little olive oil, over high heat sear thighs until fully cooked (about 5 minutes per side).

Remove thighs from heat and when they're not too hot to handle, dice them into small chunks and then toss with...

  • 1 tbsp lime juice

In the same skillet (don't wash it—keep that chicken flavor) sauté until soft and slightly charred...

  • 1 red onion, sliced

In a 9x13" baking dish fold and place upright in the dish so they all hold each other up...

  • 10-12 small flour tortillas

Fill each tortilla with a portion of the diced chicken, the sautéed veggies, and then top with a portion of...

  • 2 cups shredded queso cheese

Bake in pre-heated 400º oven for 10-12 minutes. The cheese should be bubbly and the edges of the tortilla slightly crisp

Once removed, optionally top with additional toppings such as sour cream, shredded lettuce, or salsa

Serve and enjoy!

This baked versions of tacos will make your "Taco Tuesday" a much less messy affair. The meat and veggies are so flavorful with the adobo seasoning. And everything comes together in the oven. No ingredients falling all over the place. Another night with no leftovers is a winner in my book!
