Preheat oven to 350 degrees.

Bring a large pot of lightly salted water to a boil and cook according to package directions…

  • 1 pound elbow macaroni

Drain and transfer the pasta to a large casserole dish. Set aside.

In a large mixing bowl whisk together until combined...

  • 1 cup whole milk
  • 2 cans (12 oz) evaporated milk
  • 3 eggs

Add to the mixture...

  • 1/2 cup sour cream
  • 1 cup butter, cut into small pieces
  • 1/2 lb Colby cheese, shredded
  • 1/2 lb Monterey jack cheese, shredded
  • 1/2 lb sharp cheddar, shredded
  • 1 lb Velveeta cheese, cut into small chunks

Pour milk and cheese mix evenly over the pasta and then sprinkle with...

  • 1/2 tsp salt
  • 1 tbsp white pepper
  • 1 tbsp sugar

Toss everything together in the casserole dish to evenly distribute cheese and spices.

Sprinkle evenly over the top of the casserole...

  • 1 cup sharp cheddar, shredded

Bake in preheated oven for 30-45 minutes or until top is lightly browned.

Let rest for 10 minutes. Serve and Enjoy!

I may have finally landed on a real contender for the best mac & cheese — with it's ridiculous amount of cheese more than doubling the amount of pasta by weight. And it all comes together in the oven, with nothing pre-melted together. A must try for any Mac and Cheese Aficionado.
