Preheat the oven to 350ºF

Cut into the tops and hollow out the inside of...

  • 2 foot long sourdough baguettes

Pull out all the interior breading, being careful not to penetrate the crust. Leave about half an inch of bread inside.

Sprinkle into the bottom of each baguette...

  • 1/2 cup grated gruyere cheese

Whisk together...

  • 6 eggs
  • 1/3 cup heavy cream
  • 6 slices bacon, crumbled
  • 1 small red pepper, diced
  • 2 green onions, thinly sliced
  • 1/2 tsp salt
  • 1/4 tsp pepper

Pour half the mixture into each baguette, making sure to evenly spread between the two.

Bake for 35-45 minutes or until golden brown and eggs have set. Cool for 5 minutes, garnish and cut each baguette into pieces for serving.

This delicious recipe is the perfect combination of eggs and delicious toasty bread. They can be enjoyed right away or made ahead of time and reheated later. A must try!
