The Pasta

Cook according to package directions until al dente...

  • 16 oz fettuccine pasta

Note: Reserve some of the leftover pasta water before draining the noodles as it can be useful later.

The Garlic Shrimp

In a large skillet over medium-high heat add...

  • 2 tbsp butter
  • 2 cloves garlic, minced
  • 1 lb raw shrimp, peeled and deveined, patted dry

Sauté shrimp for 2–3 minutes until cooked through, then remove from pan and set aside.

The Creamy Alfredo Sauce

Reduce heat to medium, and in the same pan add...

  • 3/4 cup butter

When the butter has melted completely, add...

  • 12 oz heavy cream

Let simmer for 5–7 minutes, stirring frequently until the cream reduces slightly and begins to coat the back of a spoon.

Remove skillet from heat and whisk in...

  • 3/4 cup grated romano cheese
  • 1/2 cup grated parmesan cheese
  • Salt and pepper to taste

When the cheeses are fully emulsified into the sauce, toss together with the fettuccine pasta and cooked shrimp. If the sauce becomes too thick, splash in a little of your reserved warm pasta water to loosen it up.

This recipe goes well with Quick Hotdog Bun Garlic Breadsticks.

Serve immediately and enjoy!
