Cook chicken in batches for 2-3 minutes per side until cutlets are golden brown. Then remove from pan and set aside.

Sauté until shallots have softened and garlic has become fragrant then add...

  • 8 oz mini bella mushrooms, broken into chunks

Saute until mushrooms are browned and tender. Deglaze the pan by adding...

  • 1 cup dry marsala wine

Scrape the bottom of the pan and let wine simmer for about a minute, then add...

  • 1 1/2 cups chicken broth
  • 3 tbsp butter

Let simmer for 5 minutes until mixture starts to thicken, then return chicken cutlets to the pan, cover and let simmer for another few minutes.

Serve over pasta, rice, or mashed potatoes. Garnish with fresh parsley and enjoy!
