Ham Steak and Potato Casserole

Preheat oven to 375ºF
Peel and dice into 1/2 inch pieces...
- 2 lbs potatoes
Cover potatoes with water in a medium pot and boil for 6-7 minutes.
When potatoes have started to soften but are still a bit firm in the middle, remove from pot, drain, and add to a mixing bowl.
Add to the mixing bowl and toss together...
- 1/2 lb or 2 cups cubed ham
- 1 cup shredded white cheddar cheese
In a skillet over medium heat add...
- 4 tbsp butter
- 1 cup diced onion
- 3 cloves of garlic, minced
When onions have softened, stir in...

- 1/2 tsp pepper
- 1/2 tsp smoked paprika
- 1/2 tsp ground mustard
- 1 tsp dried parsley
- 3 tbsp flour
Reduce heat to low and then stir in...
- 2 cups whole milk
Simmer for around 5 minutes until it's the consistency of a thin gravy.
Pour gravy over the potato and ham mixing bowl and toss together, then transfer into a greased 9x13" baking dish. Cover with foil.
Bake for 30 minutes in 375º preheated oven.
After 30 minutes remove from oven and sprinkle on remaining...

Bake uncoverd for another 5-10 minutes or until cheese is melted.
