Pre-heat oven to 350º F

Note: Make a roux with the bacon grease in the pan, if there isn't enough bacon grease, add butter.

When a roux has formed and has cooked for a minute or two add...

  • 2 1/2 cups milk
  • 1/2 can (4 oz can) diced green chiles
  • salt and pepper to taste

Cook until a nice white gravy has formed then remove from heat.

In a medium saucepan cook over medium-low heat...

  • 4 tbsp butter
  • 8 eggs, whisked

Stir constantly while eggs cook being careful not to overcook the eggs to a rubbery consistency. Remove temporarily from heat if cooking too fast.

When eggs are just about set, whisk in to slow cooking...

  • 1/3 cup crema Mexicana or sour cream
  • salt and pepper to taste

Evenly divide across the middle of 10 taco sized flour tortillas...

  • cooked bacon, crumbled
  • prepared eggs
  • 1 cup queso quesadilla, shredded

Roll each tortilla into a roll and place in a 9x13" casserole dish.

Cover tortillas evenly across with the prepared white gravy and then top with remaining...

  • 2 cup sharp cheddar, shredded

Bake in the oven for 20-25 minutes, broil for 3-4 minutes if neccessary to brown the cheese.

Remove from oven and serve. Enjoy!

My family loves enchiladas, so I thought I would try a breakfast variant with bacon, farm fresh eggs, all topped with a delicious southern white country gravy and cheese. These turned out great, and are easily reheated for a quick breakfast!
