This chicken meatloaf topped with a "Marry Me" sauce is truly a keeper. It's delicious and cheesy and wonderful. My wife and kids couldn't stop eating it. We'll definitely be making this recipe again. You really do need to try it!
Prep Steps
- 1 small onion, finely {do:dice}
- 3 cloves garlic {do:mince}
- 4 cloves garlic {do:mince}
- 1/2 cup sun-dried tomatoes, then chop {do:drain}

Preheat the oven to 400°F. In a large bowl, mix together...
- 2 lbs ground chicken
- 1 cup Italian breadcrumbs
- 1/2 cup grated parmesan cheese
- 2 large eggs
- 1 small onion, finely diced
- 3 cloves garlic, minced
- 3 tbsp olive oil
- 1 tbsp dried oregano
- 1 tbsp dried basil
- 1 tsp kosher salt{tip:We test with Morton kosher salt. Using table salt? Use about 3/4 as much. Diamond Crystal? Use about 1 1/2 times as much.}
- 1/2 tsp black pepper
Press into a loaf pan and bake until the inside reaches 165°F, 50–60 minutes.
The Marry Me Sauce
While the meatloaf bakes, melt together in a large skillet over medium heat, until fragrant...
- 5 tbsp butter
- 4 cloves garlic, minced
Add and simmer until thickened, 10–15 minutes...
- 1 cup heavy cream
- 1 cup chicken broth
- 2/3 cup grated parmesan cheese
- 1/2 cup sun-dried tomatoes, drained and chopped
- 1 tsp Italian seasoning
- 1/8 tsp red pepper flakes
Remove from the heat.
Serve
Turn the meatloaf out into the sauce, spoon sauce over the top and slice.
