I've been on the hunt for a perfect copycat recipe of the bourbon chicken you get in shopping mall food courts for years, and I think I finally landed on the perfect recipe with some help from various industry sources. I've tried other recipes and always found them wanting. You gotta try this one!

- 1/2 tsp ground ginger
- 1/4 tsp kosher salt{tip:We test with Morton kosher salt. Using table salt? Use about 3/4 as much. Diamond Crystal? Use about 1 1/2 times as much.}

- 2 tbsp oyster sauce
- 3/4 cup brown sugar
- 2 tbsp cooking sherry
- 1/2 tsp garlic powder
- 1/2 tsp ground ginger
Bring to a boil over medium heat.
Simmer Together
Add the chicken to the sauce and simmer 2–3 minutes so the flavors come together. Serve over white or fried rice with a side of stir-fried vegetables.
