Preheat oven to 400ºF.

Cook and drain well...

  • 10-12 oz frozen spinach

Whip the spinach in a bowl with...

  • 1 cup evaporated milk
  • 1 cup chopped green onions
  • 5 eggs
  • 1 tsp salt
  • 1/2 tsp nutmeg

In a separate bowl, combine the following to create a crumbly dough...

  • 2 cups shredded cheddar
  • 1/2 cup melted butter
  • 3/4 cup flour
  • 1/4 tsp dry mustard
  • 1/2 tsp salt
  • 1 tsp sugar
  • 1/2 tsp garlic powder

Press this mixture firmly into the bottom and sides of a pie plate to form the crust.

Pour the spinach mixture into the crust and bake at 400°F for 15 minutes.

Reduce the temperature to 325°F and continue baking for 25–30 minutes until the center is set and the top is lightly browned.
