Matthew McConaughey's Tuna Salad

Prep Steps

• 2 cans (4 oz each) tuna {do:drain}
• 3 tbsp red onion, finely {do:chop}
• 1/4 cup apple {do:chop}
• 1/2 cup frozen peas {do:thaw}
• 1/2 cup jalapeño potato chips, lightly {do:crush}

Mix

In a mixing bowl, combine...

• 2 cans (4 oz each) tuna, drained
• 1/2 cup mayonnaise
• 2 tsp white wine vinegar
• 1 tbsp lemon juice
• 2 tsp wasabi paste
• 2 tsp Italian dressing
• 3 tbsp red onion, finely chopped
• 3 tbsp dill pickle relish
• 1/4 cup apple, chopped
• 1/2 cup fresh corn kernels
• 1/2 cup frozen peas, thawed

Keep in the fridge until you're ready to serve.

Serve

Just before serving, fold in...

• 1/2 cup jalapeño potato chips, lightly crushed

Serve on romaine leaves, as a sandwich or even as a chip dip.

• Romaine lettuce leaves (for serving)
