Pre-heat oven to 350ºF

Mix together in an electric mixer until light and fluffy...

  • 1 cup dark brown sugar (packed in)
  • 1/3 cup greek yogurt
  • 4 tbsp unsalted room temperature butter

Add to the batter one at a time, beating in between additions...

  • 2 large eggs

Reduce speed to low then mix in...

  • 1 1/2 cups all purpose flour
  • 1 1/4 tsp baking soda
  • 1/2 tsp kosher salt
  • 4 large very ripe bananas, about 1 1/2 cups smashed
  • 1/2 cup semi-sweet chocolate chips (optional)

Spray an 8 1/2" x 4 1/2" loaf pan with a layer of non-stick cooking oil. Then line the pan with parchment paper.

Pour batter into the loaf pan and bake in pre-heated oven for about 1 hour until a toothpick inserted into the middle comes out clean.

Remove from oven and let cool in the pan for another hour, before turning out onto a wire rack until it cools completely. Then slice and serve!

My daughter requested this recipe as she had just newly discovered this concoction. Put a thick layer of salted butter on a prepeared slice piled on so thick your bite will leave teeth marks — really hits the spot!
