Marinade and Cook
In a large Ziploc bag or bowl, combine...
- 1 lb thin, flat steak cut (such as Flank, Skirt, or Sirloin Strips)
- 1/4 cup fresh cilantro, finely chopped
- 2 tbsp lime juice
- 2 tbsp olive oil
- 2 tsp soy sauce
- 2 cloves garlic, minced
- 1 tsp cumin
- 1/2 tsp chili powder
Marinate for 1-4 hours
Note: Do not exceed 4 hours. The high acidity of the lime juice will begin to "cook" the proteins and break down the fibers, turning the steak from tender to mushy or rubbery.
Remove steak from marinade and pat until slightly dry. In a heavy skillet or grill over high heat, cook steak for about 3 minutes per side until you reach your desired doneness.
Remove from heat and let rest for 10 minutes to allow the juices to redistribute so they don't run out when you cut it.
Cut against the grain into thin, 2–3 inch strips.
