Copycat Spud Bros Classic Baked Jacket Potato

Bake the Spud
Preheat the oven to 400°F. Scrub clean...
- 1 large russet potato
Prick it all over with a fork so steam can escape, then rub with...
- 1 tsp olive oil
Season with salt and pepper, wrap tightly in foil and bake 1 hour 15 minutes.
Note: In the UK, Spud Bros use Melody or Saxon potatoes. A big russet is the closest match here.
Make the Tram Sauce
Mix together...
- 1 cup mayonnaise
- 3 tbsp sriracha
- 1 tsp dijon mustard
- 1 tsp lemon juice
- 1/8 tsp paprika
Pour into a squeeze bottle for serving. Leftover sauce keeps in the fridge.
Load It Up
Split the potato down the middle and fluff the inside on both sides. Fill with...
- 2 tbsp butter
- 1/4 tsp garlic salt
- 1/2 cup shredded Mexican blend cheese
- 1/2 cup Heinz baked beans in tomato sauce{tip:Spud Bros use the British-style Heinz beans. Look for them in the international aisle. American baked beans are sweeter and won't taste the same.}, warmed
- 2 tbsp French's fried onions, crushed
Finish with a drizzle of Tram sauce.
Other toppings to try: coleslaw, chili, garlic chili chicken or tuna mayo. Inspired by the Spud Bros food truck on YouTube.
