Credit goes to the OG (non-current) Betty Crocker for this recipe. This is one of the recipes that inspired me to build this entire website in the first place. I love how the recipe was designed and presented in her original cookbook. This recipe was one of my very first that taught me how to cook.
Prep Steps
- 6 tbsp lard {do:melt}
- 1 tbsp butter {do:melt}
The Batter
In a stand mixer, beat until a smooth, thin batter forms...
- 2 large eggs
- 2 cups buttermilk
- 1 tsp baking soda
- 1 1/2 cups all-purpose flour
- 1/2 cup cornstarch
- 2 tsp baking powder
- 1/2 tsp kosher salt{tip:We test with Morton kosher salt. Using table salt? Use about 3/4 as much. Diamond Crystal? Use about 1 1/2 times as much.}
- 6 tbsp lard, melted
Note: No buttermilk? Stir 2 tbsp vinegar into 2 cups milk and let it sit 5 minutes to make sour milk. Fresh bacon fat works in place of the lard.
Bake
Heat the waffle iron and brush it with...
- 1 tbsp butter, melted
Pour in enough batter to fill the iron and bake until golden and crisp. Repeat with the rest of the batter.
