I overheard someone raving about PF Chang's lettuce wraps the other day so I thought I'd try a stab at making them. This recipe is simple and fast and I was amazed and surprised at how much the kids loved them. They kept asking for seconds! They liked the lettuce "taco shell" the most I think.
Prep Steps
- 2 cloves garlic {do:mince}
- 1 onion {do:dice}
- 1 tbsp fresh ginger {do:grate}
- 1 can (8 oz) water chestnuts, then dice {do:drain}
- 1 head romaine lettuce into leaves {do:split}
Brown the Chicken
In a large skillet over medium-high heat, add...
- 1 tbsp olive oil
- 1 lb ground chicken
Cook until browned, 3–4 minutes.
Add the Sauce
Stir in...
- 2 cloves garlic, minced
- 1 onion, diced
- 1/4 cup hoisin sauce
- 2 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tbsp fresh ginger, grated
- 1/4 tsp black pepper
Cook until the onion is tender, 2–3 minutes, and season to taste with salt. Stir in and cook a couple of minutes more to heat through...
- 1 can (8 oz) water chestnuts, drained and diced
Wrap & Serve
Lay out...
- 1 head romaine lettuce, separated into leaves
Use each leaf like a taco shell, spooning the filling down the middle.
