  • 3.5 to 4 lbs beef chuck roast
  • 1.5 lbs Yukon Gold or baby red potatoes
  • 1 lb carrots
  • 1 1/2 cups low-sodium beef broth
  • 1 large yellow onion
  • 2 packets Dry Onion Soup Mix
  • 2 tbsp cornstarch
  • 2 tbsp Worcestershire sauce
  • 6 cloves garlic
  • 1 tbsp tomato paste
  • 2 bay leaves
  • 1 tbsp kosher salt
  • 1 tsp black pepper

Scatter across the bottom of the slow cooker...

  • 1 large yellow onion, cut into wedges
  • 1.5 lbs Yukon Gold baby potatoes
  • 1 lb carrots, peeled and cut into 2-inch chunks

Note: Vegetables placed across the bottom act as a natural trivet for the roast

Place directly on top of the onions...

  • 3.5 to 4 lbs beef chuck roast
  • 2 bay leaves

Whisk together in a bowl and pour directly over the roast...

  • 2 packets Dry Onion Soup Mix
  • 6 cloves garlic, minced
  • 2 tbsp Worcestershire sauce
  • 1 tbsp tomato paste
  • 1 1/2 cup low-sodium beef broth
  • 1 tbsp kosher salt
  • 1 tsp black pepper

Cook on low for 6 hours (or high for 3.5 hours)...

Transfer meat and veggies to serving plates or platters and discard bay leaves.

Transfer leftover juices into a medium sauce pan. Then mix together into a slurry and whisk in...

  • 2 tbsp cornstarch
  • 2 tbsp water

Cut the meat into portions and then serve with the potatoes, carrots, and gravy. Enjoy!
