Pre-heat oven to 350º F.

Add to a large skillet over medium high heat...

  • 1 lb spinach, roughly chopped

Cook the spinach until wilted then remove from pan and drain.

Add cooked spinach to a large mixing bowl and add...

  • 8 oz cream cheese, softened
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1 can (14 oz) artichoke hearts, drained and chopped
  • 1/2 cup parmesan cheese, grated
  • 1/2 cup mozzarella cheese, shredded
  • 2 cloves garlic, minced
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Mix ingredients together thoroughly and then transfer to a casserole dish and top with...

  • 1/2 cup parmesan cheese, grated
  • 1/2 cup mozzarella cheese, shredded

Bake for 30-35 minutes until bubbly. Cook for another 2 minutes under the broiler to brown the cheese.

Serve immediately with tortilla chips. Enjoy!
