  • 32 oz chicken stock
  • 2 tbsp chili powder
  • 1 tsp cayenne
  • 1 tbsp smoked paprika
  • 1 tsp ground cumin
  • 1 tbsp dried oregano
  • 1 tbsp brown sugar
  • 2 tsp cocoa powder
  • 1/2 tsp salt (or to taste)
  • 1 can (14.5 oz) beef broth
  • 1/2 cup sour cream

In a large dutch oven over medium high heat add...

When everything has softened and become fragrant add to the pot the set aside seared chicken, shredded thoroughly with a fork along with...

  • 2 cans (14oz each) crushed red tomatoes
  • 6 oz tomato paste
  • 32 oz chicken stock
  • 2 tbsp chili powder
  • 1 tsp cayenne
  • 1 tbsp smoked paprika
  • 1 tsp ground cumin
  • 1 tbsp dried oregano
  • 1 tbsp brown sugar
  • 2 tsp cocoa powder
  • 1/2 tsp salt (or to taste)
  • 1 can (14.5 oz) beef broth
  • 1/2 cup sour cream

Simmer covered, low and slow for 6-8 hours.

Make this in advance and serve it the next day for the flavors to really get a chance to combine.

I made this chili for a cook off at my church and it won second place! (out of 12 contestants). It's a bit spicy, but not too spicy. I hope you give it a try.
