- 1 (14.5oz) can fire roasted diced tomatoes
- 1/2 cup chicken broth
- 1/4 tsp sugar
- 1/4 tsp salt
- 1/4 tsp pepper
- 1/8 tsp baking soda
Bring to a boil then reduce heat and simmer for 15-20 minutes to allow the flavors to meld.
Remove soup from heat and use an immersion blender to blend until soup is smooth. If you don’t have an immersion blender you can use a potato masher and enjoy it chunky.
Once blended add…
- 1/2 cup whole milk
If needed, heat gently until soup is warmed through. Do not boil once the milk is added, as this can cause the milk to curdle (though the baking soda is intended to mitigate that).
Garnish with some fresh basil. Goes well with a classic American Grilled Cheese sandwich.
