Pre-heat oven to 425º F

Potatoes

Place into a large pan filled with cold water...

  • 1 lb baby potatoes
  • 1/2 tsp salt

Simmer for 15-20 minutes until just tender.

Drain the potatoes and run under cold water. Halve the potatoes and pat dry with paper towel. Set aside.

Mushroom Gratin

In a frying pan over medium high heat add...

  • 1 tbsp olive oil
  • 1 shallot, finely diced
  • 1 whole garlic clove, crushed (but still whole)

When shallot has softened, add to the pan on high heat...

  • 2 tbsp olive oil
  • 8 oz baby bella mushrooms, chopped (or a mix of shiitake, oyster and chestnut)

Stir frequently for around 7 minutes until the mixture is browned and quite dry/

Remove the crushed garlic clove and move the mushrooms to a sieve and squeeze out any remaining excess liquid. Set aside.

In a separate bowl whisk together until softly stiff...

  • 4 tbsp cream

Then fold in the mushroom mixture along with...

  • 1 egg yolk
  • 2 tbsp chives, finely chopped
  • 1 tbsp freshly grated parmesan
  • salt and pepper to taste

Steaks

Season with salt and pepper all over...

  • 4 beef fillets

In a large skillet over high heat coated with olive oil, add the steaks to the skillet and sear on all sides until a nice crust has formed all around each fillet. This shouldn't take more than 2-3 minutes total.

Remove fillets from skillet and put them onto a shallow baking tray.

Pile the Mushroom Gratin mixture high on top of each fillet and then top with an equal division of...

  • 2 tbsp freshly grated parmesan

Cook steaks in the pre-heated oven 5-7 minutes until topping is bubbling and golden (Internal temp of steak should be between 125-130ºF for medium rare).

Finishing

While the steaks are finishing in the oven, heat in the skillet over high heat...

  • 1/4 cup olive oil

Add the set aside baby potato halves to the oil along with

  • 1 tbsp dried rosemary (few sprigs rosemary)
  • 8 garlic cloves, skin on and lightly crushed

Stir frequently to prevent potatoes from sticking to the pan until they are golden brown.

When potatoes are almost done, add...

  • 1 1/2 tbsp butter
  • salt and pepper to taste

Remove sauteed potatoes and serve with the steaks after allowing them to rest for 5-10 minutes.

I made this years ago for my wife for our anniversary dinner and it's stuck in my mind as one of the most delicious meals I ever made. Beef Tenderloin is so tender, but it needs an extra flavor boost provided by the mushroom gratin. It's insanely great. Please try it!
